Cream of mushroom soup

²– 500g mushrooms
– ½ onion
– 4 cloves of garlic
– One vegetable stock cube or homemade stock (500ml)
– A little plant-based cream
– Salt to taste
– Ground pepper to taste
– 3 tablespoons extra virgin olive oil
In a saucepan, heat the olive oil and sauté the chopped onion and garlic. When they are golden brown, add the cleaned and chopped mushrooms. Sauté them.
Add the vegetable stock, salt, and pepper, and let them cook until tender. If necessary, add a little water.

Pure the soup and add a splash of cream.
