Make the Fruit Jewels: Prepare the flavored jelly according to the package, but keep the water slightly under the recommended amount. Pour into a shallow container and refrigerate until very firm. Once set, slice into 1-inch cubes.

Bloom the Gelatin: Sprinkle the unflavored gelatin over the 1/2 cup of cold water. Let it sit for 5 minutes until it looks like a thick sponge.

Melt the Gelatin: Microwave the “bloomed” gelatin for about 30 seconds (or melt it over a pot of hot water) until it is completely liquid and clear. Do not let it boil!

Create the Creamy Mixture: In a large mixing bowl, whisk together the condensed milk, evaporated milk, and whole milk. Gradually whisk in the melted unflavored gelatin until the mixture is perfectly smooth.

The Assembly: Scatter your orange/mango jelly cubes into your large glass baking dish. Gently pour the creamy milk mixture over the top. If the cubes float, just give them a light tap with a spoon to distribute them.

The Set: Chill in the refrigerator for at least 4 to 6 hours (overnight is even better) until it is firm and bouncy.
