Step 1: Cook the Potatoes and Beef
Add the chopped potatoes to a pot of salted water and boil until just fork-tender, about 8–10 minutes. Drain and set aside. While the potatoes cook, brown the ground beef in a large skillet with the onion and garlic. Cook until the meat is fully browned and the onion is soft, then drain off any excess grease.
Step 2: Season and Crisp
Season the beef mixture with salt, pepper, and Italian seasoning. Add the cooked potatoes and drizzle with olive oil. Cook over medium-high heat, stirring occasionally, until the potatoes turn golden and slightly crispy.
Step 3: Melt the Cheese
Scatter the shredded cheddar over the skillet. Gently stir until the cheese melts and coats the hash evenly.
Step 4: Serve
Finish with chopped parsley or green onions if desired. Serve hot while the cheese is gooey and the potatoes are crisp.
