Instructions
1. Prep
- Preheat oven to 375°F (190°C)
- Line a baking tray with foil
2. Pre-bake peppers (optional but recommended)
- Place halved peppers on tray
- Bake for 10 minutes to soften slightly
3. Cook filling
- In a skillet:
- Cook ground beef with onion until browned
- Drain excess grease
- Add garlic, pizza sauce, Italian seasoning
- Simmer for 3–5 minutes
4. Stuff peppers
- Fill each pepper half with meat mixture
- Top with mozzarella cheese
- Add pepperoni slices on top
5. Bake
- Bake for 15–20 minutes, until:
- Cheese is melted and bubbly
- Peppers are tender
6. Serve
- Let cool slightly and enjoy hot
Tips
- Add extra cheese for that gooey “pizza pull”
- Use mini peppers for bite-size versions
- Want crispier tops? Broil for 2–3 minutes at the end
Variations
- Low-carb: keep as is
- With carbs: add cooked rice or pasta inside
- Chicken version: swap beef for shredded chicken
- Supreme style: add olives, mushrooms, green peppers
