Prepare the Oven and Pan:
Preheat the oven to 180°C.
Butter and flour a 24 cm cake pan, or line it with parchment paper.
Prepare the Apples:
Peel the apples, cut them into thin slices, and drizzle them with lemon juice to prevent browning. Set aside.
Sift the Dry Ingredients:
In a bowl, sift together the flour and baking powder.
Beat the Eggs with the Sugar:
In another large bowl, beat the eggs and sugar using an electric mixer or a stand mixer until light and fluffy (about 5-7 minutes).
Add the Oil and Milk:
Add the vegetable oil (or melted butter) and milk to the egg and sugar mixture, stirring gently until the liquid ingredients are well incorporated. Add vanilla extract, if desired.
Incorporate the Dry Ingredients:
Gradually add the dry ingredients to the liquid mixture, stirring gently with a spatula or wooden spoon, until the mixture is smooth and free of lumps.
Add the Apples:
Incorporate half of the apple slices into the batter, stirring gently to distribute them evenly.
Pour the Batter into the Pan:
Pour the batter into the prepared pan, smoothing it with a spatula.
Arrange the remaining apple slices decoratively on the surface of the batter.
Bake the Cake:
Bake the cake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
Decorate and Serve:
Once cooled, dust the cake with powdered sugar before serving.
This moist apple cake is perfect for breakfast, a snack, or as a dessert. Enjoy!
