Crispy Zucchini Fries

Directions
1. Begin by preparing your zucchini. Wash them thoroughly, then cut into fry-sized sticks, about 3 inches long.
2. Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second, beat the eggs. In the third, combine the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
3. Dip each zucchini stick first into the flour, shaking off any excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to ensure an even coating.
4. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the zucchini fries in batches, making sure not to overcrowd the pan.
5. Fry the zucchini sticks for about 3-4 minutes per side, or until golden brown and crispy.
6. Remove the fries from the oil and place them on a paper towel-lined plate to drain any excess oil.
