Ingredients
For the main version, you only need a few basic ingredients.
3 cups mashed potatoes
1.5 cups grated mozzarella or cheddar
1 egg
1/2 cup cornstarch or all-purpose flour
Optional Add-ons
Salt
Black pepper
Garlic powder
Onion powder
Chopped parsley
A little grated Parmesan cheese
A pinch of paprika
These extra seasonings aren’t mandatory, but they make the bites even tastier if you’re looking for a more intense flavor.
Start with the mashed potatoes
Cold mashed potatoes are the best choice for this.
They’re easier to handle and shape, and they help the mixture stay firm enough to form small balls or patties.
If the mashed potatoes are freshly made, let them cool first.
Pour the mashed potatoes into a large bowl.
Aim for a smooth mixture, but it doesn’t need to be perfectly whipped. A slightly grainy texture is fine.
In fact, that slightly homemade look is part of its charm.
Add the binding ingredients
In the bowl, add the egg and cornstarch or flour.
This helps the morsels hold together during baking.
Then add about half of the grated cheese directly to the potato mixture.
Mix all the ingredients until you have a soft dough.
It should be easy to scoop and shape.
If the dough is too soft, add a little cornstarch or flour.
If the dough is too thick, you can loosen it with a tablespoon of milk or a little more mashed potatoes.
This part is flexible.
Potatoes behave slightly differently depending on how they were originally prepared, so it’s perfectly normal to make small adjustments during preparation.
Season the mixture
It’s time to add a little extra flavor.
A pinch of salt, black pepper, garlic powder or onion powder pairs beautifully with this recipe.
