Making the Panna Cotta (20 minutes)
Soak the gelatin sheets in cold water for 10 minutes.
In a small saucepan, combine:
Fresh cream
Sugar
Vanilla seeds
Salt
Heat over medium heat to 85°C (do not boil).
Remove from the heat and stir in the potato puree.
Squeeze the gelatin and fold it into the hot mixture.
